Spinach Salad

We have this spinach salad for Christmas dinner. It serves 8 - 10 very hungry people.

Ingredients:

Dressing

1 c. salad oil
1/4 c. red wine vinegar
1/3 c. ketchup
2/3 c. sugar
1 medium onion chopped tiny
3 long green onions chopped

Salad
1 can of sliced water chestnuts drained
2 bags of pre-washed spinach leaves (get the kids to help snap off the stems and make sure there's no grit)
1 to 2 cups of fresh bean sprouts
1 to 2 cups of crumbled cooked bacon
5 sliced hard-boiled eggs
1 to 2 cups of fresh mushroom slices


Pre-mix the dressing first so that flavors may mingle. Right before the meal, pour the well-mixed dressing (I shake the dressing in a large glass jar) over the salad ingredients and then toss the salad several times.

Caution: It doesn't keep well to use as a left-over.
